Custom checkout field hidden

When using the custom checkout field, the fields are by default hidden (or “protected”). Is there a way to make it so that they are not hidden? I don’t want to have to run a query to remove the “_” to make it visible every time. I would prefer that new orders come with the “_” removed to it is visible.
