Creating redirection: change slug first in quick edit?

When setting up a redirect for a single post, I’ve been changing the slug (just using this one as an example) by going into quick edit under Posts, changing the slug (from /deep-fried-jackfruit-with-garlicky-dill-mayo) to /deep-fried-jackfruit.
Then I go into Tools>Redirection. In the source url, I enter the old slug: /deep-fried-jackfruit-with-garlicky-dill-mayo and in the target url, I enter the new url: https://olivesfordinner.com/deep-fried-jackfruit/
Should I be changing my slug first or do I just need to enter the old slug and the new url to what I want it to be? Am I just adding an unnecessary step here or is this the wrong way to do this?
