Creating “events” to Order Against

I’m using WooCommerce to add shopping cart functionality for my local food co-op.

We order every other week, and it would be nice to drive orders against a specific date or “pickup” instead of just random orders coming in.

For example, we place orders on Aug 17 for Aug 24 pickup. I would like orders in this window to be specified that they are for the Aug 24 pickup date.

Does anyone know a way to implement this functionality in the plugin?
