Creating Charts with form data

Hi WordPress people.

I’m researching into using WP as a task and opportunity tracker at work that will:

All a user to enter data through a form
View tables with data on them
Control access to pages (I think that’s wp standard)
Display metrics about the data in the tables with criteria controls

I was wondering what plugins/themes would best achieve this. While I have seen chart plugins I’m unsure as to how it connects to data.

As a bonus if the tables can be downloaded as a spreadsheet/csv that would be amazing.
