Creating a page of posts in 3.0, and a question about categories

Hi everyone,

I use WordPress 3.0 with the Station theme (free version) from Pagelines. Is there a tutorial out there to create a page that contains only posts from a certain category?

Also, when you click on a category, by default it will show posts only with title and author, without the text. Is anybody familiar with adding the text to what you see on the screen?
