    You can create your own custom excerpt by adding it to the Excerpt box on the Add New/Edit Post page.

    on the add new/edit post page I cannot find the edit Excerpt options

    even with the 2011 Theme ??

    If you do not see this pane, click Screen Options and tick “Excerpt” on any Edit Post page.
