Create a seating plan

I can’t see how to create a seating plan. I’ve read the manual and it doesn’t make sense. It looks like I have to enter characters to create rows, is that right?
But I don’t understand how that works. Any help would be appreciated.

(I’m looking to pay someone to set this all up for me.)
