Yes, you can use the custom post type inside the Gutenberg Post Blocks. But you can not use custom taxonomy here. Only the taxonomy category and the tag are working here. But we have a plan to add custom taxonomy in the query section. I hope your problem is solved. If you have any more question let us know. We try to give you better feedback.
