I understand that you want to remove Stripe completely.
Do you see any residual Stripe payments listed under WP Admin > WooCommerce > Settings > Payments? If so, try deactivating those.
You can also check for WooCommerce Payments as that uses the Stripe payment gateway, too.
As such, Stripe Apps can be uninstalled by an Administrator from the App Settings page: https://dashboard.stripe.com/settings/apps
To disconnect your financial accounts from Stripe you can visit your linked accounts settings page and unlink any of the linked accounts by clicking “Manage” and selecting “Remove account”. More details can be read here: https://support.stripe.com/how-to-disconnect-a-linked-financial-account
If you want to close the Stripe account, you can do so by navigating to Settings > Account details in the Dashboard. On the Account details page, scroll to the bottom and click Close account. More info on this can be found here: https://support.stripe.com/questions/close-a-stripe-account
