Community Events Categories

We are interested in adding the Community Events add-on to our site
Everything looks great, but I have a question about the feature where “users can choose from a list of existing categories and tags on your event submission form”.
The question I have is can I specify WHICH categories and tags users are able to choose from? I don’t want user to be able to choose from all of the categories and tags that have been created on the admin side. I only want them to be able to choose from the ones I specify.
Does my question make sense?
