If I understood you correctly, you can try to show only the Products at your Category display.

Your Category Pages can display Products or Subcategories within a Category, or both.

You can set it up thought your Customizer: Appearance > Customize > WooCommerce > Product Catalog.

Hi, thanks for the reply. Not quite, I want this list here to just show the top level parent categories until the user clicks on them. We literally have 1000’s of sub categories so a fully expanded list like this wouldn’t work.
