    My main domain is an ANAME of an IP address. If I tell my users to use the CNAME method when directing their domain to my host, would that make it impossible for them to host their email on a different server- would the CNAME record override the MX record?

    No, CNAMEs don’t affect MX records.

    Normally the www is CNAMEd to the non-www. Usually people use a subdomain of their main domain install for the CNAME (ex. sites.domain.com).

    For sites.domain.com to function you would need an A record for that subdomain or a wildcard DNS record for all domain.com subdomains. The record would need to point the domain to the account with your WP install & your web host/account needs to be configured to send requests for the subdomain to the WP install.
