choose which page to post to

I have my website set up with some fixed pages as the nav bar, such as contact, map, photos, the usual really.
I have some categories on the website too. Probably best to note this is a business site and so the main page is a static page.
As I add more posts to the site, often two a day, I realise that the latest page (i.e main blog) isn’t as structured as I want it. I add a small article with one photo. That is the latest news. I now add another blog with lots of photos from the same event. I want to be able to add the small article to the ‘latest news page’ (the blog page) and the photo album to the ‘photos page’. I know this isn’t how WordPress was designed but I have seen others wanting to manipulate it the same way.
So, how hard is it to hack the page, or to request on the ‘hopes and dreams’ forum so that it is possible to choose which page to post to. For example, the news item with one photo is posted to ‘Latest News’ Page(whether or not that is the front page) and my latest photo album is posted to the ‘Photo Album’ Page.

I can think of a way around it by combining pages and categories. So, how can I make a link appear on my menu, which is actually a category? So I have the usual, maps, contacts, etc which are fixed pages. In amongst these navs I want to display photos, which is infact a list of posts with category photo.
