There are some basic layout controls available in the free Gravity PDF plugin that will be helpful:

1. Excluding fields from the PDF
2. Drag and Drop columns

We also have some paid templates that may be useful for you:

1. Tritan
2. Sabre

For greater control over the layout and format of the PDF you may need to build a custom PDF template using HTML/CSS/PHP.
