Choose custom taxonomy ahead of time

I was wondering if there was a way to offer custom taxonomy but have one pre-selected, and be able to hide the visibility of that section. I am sure I can figure it out but I was wondering if there was already a built in feature for this?

This would be like, having a certain event category selected, when making an event, instead of them seeing all the event categories.
