Character Set/language

Hi. I’m building a web shop in Swedish, and would like the customers to sort products alphabetically. The problem is that we have more letters than the English alphabet. After Z we also have three other letters – ?, ? and ?. The sorting in our WoCommerce is just sorting from A to Z, or from Z to A (I use the Extra Product Sorting Options for WooCommerce from SkyVerge for the moment). How can I change this? I have heard that I have to change the character set in the tables in the data base, but if that’s correct – which table?
