Changing the post date

I am archiving field observations into a blog and I would like to make the post dates the dates that the entries were made in the field book, not the date they are entered in the blog.

Is there a way to change the post date of entries? A plugin maybe? A theme?
This will also be used by end users in the future, so using mysql commands and manipulating the database directly is not a viable solution.
