Changing the "documents" from the Menu/Widget

They are a part of the FontAwesome icon font. To change that icon in particular do something like:

.widget_nav_menu ul li:before {
content: "\f13d";
}

You can find the unicode reference for each character on the fontawesome site: https://fontawesome.io/icons/
