To change the placeholder, you can use the following CSS in Customizing > Custom CSS/JS > CSS Code:

#searchform-header-replace input::placeholder,
#searchform-dropdown input::placeholder,
#icon-searchform-dropdown input::placeholder {
  color: #3a00ff;
}
