Changing Order of Page Titles in Header

Hello,

I am a total newbie to website construction. So I would really appreciate instructions that are very, very simple.

1st question: I am using the Twenty Ten 1.0 template. I would like to re-arrange my pages to my liking. As of now, they are automatically placed alphabetically. How do I change this?

2nd question: I need “Gyrotonic Expansion System?” page title to be in New Times Roman. When I changed it, however, it changed the placement of the title. How can I prevent this?
