Still can’t find any changelog to latest version. I need details about the changes in 8.0.3.

I think that the original poster meant that the link on the WordPress plugin update page (within WP admin), has a link to a changelog that stopped updating at WooCommerce version 5.0.0

If so, the link is correct on my end, and the raw changelog it points to is updated:

I notice that the link you have shared, differs from the link I am seeing on my end on that page:
