Change text ‘Request Booking’

You can change all the text in the plugin. I recommend you use a plugin like Loco Translate:

It will give you a page in your WordPress admin area where you can translate all the themes and plugins on your site.

Loco Translate will work for you in either case. Even if you just create a custom en_US translation (US English — the default language), it will let you modify any of the text in the plugins and themes on your site.
