Change/Remove Choose String before options in Contact form

The second and third question of the contact form as you can see are dropdown selects. I would need to either remove the question label (the one that starts with Choose … ) from the options available to select in the dropdown, or at least remove the Choose string, so it just starts with the same label as the question title.

Ok but what will be done exactly? Ideally we should be able to write ourselves the label that is shown before choosing any option (just a placeholder), which should not appear in the option select dropdown. Is this what you will do?
