Change "Publish" button by "Submit" button

Hi,

First, thanks for your work !
I gave capability for some roles to edit events, directly from their WP admin panel.
The problem is that roles who can create events, can publish directly without any moderation.
Into the editing event page, I would like to change the “Publish” to a “Submit” button.
How can I do this ?
