Change number of post heading under categories

I have set up my blog so that only 1 post is posted on the home page. However, my category is also showing one post and I have to go to “previous post” to see the rest of the categories.

I would like my category pages to be like a menu where all my previous post under that category is listed.

How do I go about doing this?
