Change Home Page Header and Subheader

I searched through the forum but couldn’t find anything that seemed to work for this. I’m simply trying to change the home page header and subheader. This code below enabled me to delete the subheader portion of the home page (which is odd since it references the blog page…?) but I can’t figure out how to change the subheader to display different text. I think I’ve tried every option in the customize theme menus and nothing has worked.
