Change “Choose an Option” Text from Select Boxes

What I would like to do is simple really… or I thought it was, as I’ve managed to make the change in past WooCommerce versions.

How can I change the default text “Choose an Option” for select boxes when a visitor is viewing a single product page and choosing attributes? I’ve scoured the codebase and cannot find any match for that phrase in all the usual locations (i.e. variable.php, single-product.php, etc.). It is driving me nuts!

I’m sure either I’ve missed something obvious or my eyes are playing tricks on me. But maybe something has changed quite a bit in recent WooCommerce updates because most solutions I found point to variable.php where that text should be located. Not when I check ??
