Change a function with no overide in parent / Gallery

You need to change in parent file a little, like this :

if ( ! function_exists( 'onepress_gallery_html' ) ) {
     function onepress_gallery_html( $data, $inner = true, $size = 'thumbnail' ) {
      // all original code
     }
}

Then you can copy onepress_gallery_html and change again in child theme’s functions.php
