Category Name – Clear Text

Hi, is there currently anyway for me to include the category name for a specific post within the loop, i am aware of the current method provided within the WordPress Default template … but it appears this displays the category name attached with an appropriate URL linkback to the category location itself. This isnt what i want, just a simple category name which i can use, does anyone here know if it is possible?
