Categorising and Posts on the Homepage

Hello. I am building a new site using the ‘Blue With Grey 1.2’ theme. I would like to upload a LOT of posts onto the site, but I don’t want the page to be an endless list of posts. Is there any way to customise which posts appear on the homepage, and which posts are seen only when the appropriate category is selected? Many thanks for any advice offered!
