No, unfortunately there are no global option for these options.
We made this behavior in order to give you more freedom so you could style each part of the theme independently and how you want.

Is there a way to add css to style all cards?

Based on your answer I will be able to better assist you ??

Rather than going through the customizer for card options for Blogs, Single Posts, etc, how would I target all cards across all pages in the Additional CSS section so that I could do things like change the box shadow, etc.?

You can simply use this css code:

.entry-card {
	box-shadow: 0px 10px 20px 0px red !important;
}

Pardon my ignorance, but is there a way to change the design of the Post Meta “Categories” so that one Category A can be one color while Category B is another color?
