Capture email at checkout

Question regarding placing email in the checkout section. we are using the Mailchimp to Woocommerce for our site We are trying to send abandon cart emails when they leave without buying does anyone know if once they add their email into the checkout section and then bounce of the site and without hitting any submit button will it collect and add the email into Mailchimp with a plugin we want to add? Has anyone heard of such thing that can be done. I hope I am explaining it right.
