Can’t overwrite from name or from email

The plugin prevents overwriting the from name or from email.
This is an issue because when using plugins such as Gravity Forms (and many others), you can set these values per email notification.
So this means if you want email A to be sent with the from email [email protected] and email B to be sent with the from email [email protected], you can’t because the plugin prevents it from being overridden.

Please can this be fixed?
It affects many other plugins like WooCommerce or anything that needs to change values like this.
