Cant edit custom fields after order is made

I have setup WooCheckout on behalf of a customer.
They have recently had a large number of online sales, but as a result a lot of order mistakes. We are unable to edit any of the data in the custom fields in these new orders. They don’t allow us to change when we click the edit tab.Is there a way I can edit an orders details via coding perhaps? I assume all customer purchase info is stored somewhere?
