Cannot save woocommerce_thumbnail

I’m trying to fix the common issue “blurry images” by setting the correct size of the catalog thumbnail under customizer->woocommerce->product images.
Unfortunatelly, the new value seems not to get stored. I’ve installed the “regenrate thumbnails plugin” and i can see that among the registered sizes, both “woocommerce_thumbnail” and “shop_catalog” are still to 300×300 while they should be at 380×380

The weird thing is that this only occours on a production enviroment, while both on my localhost and stage server, everything’s fine.
