Can {{LIST}} in emails have links that can let users subscribe/unsub?

Regarding your query for allowing subscribers to choose the list in the double opt-in email itself, I afraid that currently, it will not be possible.

But you can allow your subscribers to choose the list when they subscribe through the Email Subscribers’ subscription form. For this, you will need to enable Allow contact to choose list(s) option while creating/editing forms. Here is a screenshot for a reference.

To unsubscribe from a list, subscribers will need to click on the unsubscribe link inside the emails which they will receive from you, and then they will be redirected to the unsubscribe page on your site. There they can confirm their unsubscription.

In the lite version, there isn’t any option to choose a specific list on the unsubscribe page. Instead, they will be unsubscribed from all the lists. But in the starter version, the admin can allow subscribers to unsubscribe only from a specific list.
