Can I display more than 1 chart?

    Yeah, of course. Just add another shortcode for each chart you want.

    Thanks, though, how will the plugin know which chart goes where?
    As far as I understand, the gdoc source will remain the same, so the plugin doesn’t know which data to take from which Sheet (Sheet1, Sheet2 etc).

    Obviously, you need to tell it that. Read the readme to learn how to do that (obviously).
