    can I change the color of the widget to the desired one? if so how?
    Yes, you will need to know CSS and how your particular WordPress stylesheet should be customised. Please hire a designer to help you with that because I can’t help with styling issues due to a lack of time.

    can I display desired category per widget, if so how?
    It’s not possible because it works like the default WooCommerce Categories widget in how it highlights the current category only.
