Is this with post types that you had before 1.0.x? or with new ones you just created?

CPTs are usually hidden away in the “Screen Options” menu, and must be manually checked to appear in the Menus section. This is a per-user preference. See here: https://i.imgur.com/heTKptV.png

Sounds viable.
