Blog (with its own wp-install) in sub-directory of main WP site?

I have a new WP site install on a new host with a bunch of custom post types and taxonomies. This was a slight redesign and site move from another host/platform over to WP.
We’re not using this new site as the ‘blog’. There’s already another WP site with a different design that is the blog.
Everything is good so far. I did the install in the root of the new domain and now I’d like to move the existing blog, which is at different domain, over to the new site and put it in a sub-directory. I’d like to end up with a URL that is something like:
https://kerrygoldusa.com/grazings
or
https://kerrygoldusa.com/blogA completely separate wp-admin is fine for the blog in the sub-directory, even preferred at this point.
Eventually I’m going migrate the current blog over to the new site and use the ‘posts’ section so that the blog is included in the site. There will most likely be a redesign of the blog to match the main site.
I did a little test on my local development environment where I created a sub-directory called ‘blog’ and did the wp 5-min install on there. Next, I was hoping I could just copy over the Db and the files and everything would be fine. I did a little test on my fresh sub-directory install by adding a new post, all good, but as soon as I changed the permalink structure from anything, but default I ended up on my main site’s 404 page.
Any ideas or advice about getting to where I’d like to go with these site structures? Am I stuck with the default permalink for my sub-directory install or should I be able to tweak the .htaccess to make it work?
I started reading about the multisite setup, but haven’t had much luck getting it to work. It was kind of confusing and because I don’t mind the separate wp-admin I thought I might try a sub-directory with a full install in there.
Any advice or references for what I’m trying to do would be appreciated.
