Block theme incompatibilities?

in short: not as far as I know

WPPizza doesnt really care too much about themes – or indeed the blockeditor/gutenberg – anyway to be honest
it pretty much does its own thing but using the used themes css declarations as much as possible only overriding things where strictly necessary

and there are of course a multitude of options built into the plugin (wppizza-> layout) as to how people would like to display things
