Big problem: orders not showing up in backoffice, but visible in database

I’ve just switched from Prestashop to WooCommerce for my webshop, but I just ran into some serious problems after we went live.
I’ve live-tested some orders, and they worked fine (with PayPal and our payment service provider). However, the first 2 orders made by unknown customers did not show up in the back office. I have received the payment succesfully, and they show up in the database with status “wc-awaiting-payment”. I reckon any order with this status is invisible in the backoffice? Perhaps a setting somewhere.
Now I’ve failed to re-create the problem. I’ve tested with both PayPal and our PSP again and there was no problem in processing the order from start to finish; an order in the back office with status “wc-processing”. This is my biggest problem: I can’t recreate the error the other customer seemed to have.
I have the idea that my PSP is sending feedback to WooCommerce succesfully, but Woo isn’t properly changing the statuses or something.
Is there any way to check what’s going on behind the scenes? Some logs I can check maybe? Anything?
The only thing I can think of is some error/setting/bug like.. if they check out as guests it bugs somehow, or perhaps have a different/error landing page? I’m really reaching for something here, i’m in the dark.
Anyone has some suggestions or pointers? Would be much much appreciated!

DaveP.s. I’ve manually changed the status in the database to “wc-processing”, which made them show up in the back office properly.. but it’s only a temporary solution obviously.
