Better Override “From” Details setting

The current Override “From” Details option is actually overriding “From Address” and “From Name” fields. Could we have an option to just override the “From Address”?

The idea of this option is that some plugins may don’t play nice with the From Address option cause outgoing emails cannot be sent successfully due to SPF / DMARC validation. However “From Name” can be set arbitrarily regardless of the “From Address” validation.

So I suggest separate it into two options.
