Best way to merge databases?

Hi all,
We have built a very big website for a client that’s updated almost every day by different contributors, editors, etc. It uses Buddypress as well, so there are new members every week. It also has the GD Rating plugin so that also changes daily, among other things such as comments, xprofile data and other changes the main Admin might do.
We are going to set up a test environment with an EXACT copy of the live one so we can work on what it will be Phase 2, new design, new features etc.
The problem is we can’t tell the editors to stop publishing posts and changing content as this will be done during the course of 2 months or so.
Also, and very important, once we have the Test environment ready we’ll try to upgrade to the latest version of WordPress, Buddypress, and any other plugins we can, just so we have the latest of everything, and then fix accordingly.
WHAT IS THE BEST WAY OF KEEPING UP TO DATE WITH THE LATEST UPDATES ON THE LIVE SITE WHILE WE DEVELOP ON THE TEST ONE?
We have found tools like MySQLDiff https://www.mysqldiff.org/ that might be useful, but as we will be working with different verisons of WP and other plugins, we are not sure.
Any assistance and ideas on what could be the best way would be great!
