Yes you can achieve this by several methods. One method is to make product quantity 1 and when the customer is made an order to reduce the stock when they choose order approval.

dokan Order approval plugin uses a custom payment gateway called woa_gateway and order status will be waiting . Based on these two conditions you can reduce the stock.
