Auto restore stock after cancellation

We are using Woocommerce to do a ‘pet pickup’ service on a site. We are running into a problem in that if someone cancels and order, the available ‘slots’ (inventory) is not restocked.

The only plugin I see for Auto Restock is very out of date and the information I’m reading suggests the modern Woocommerce does it automatically. If so we seem to be missing how to do it.
How do we auto restock the cancelled orders?
