I am sorry, but this is not currently possible with the WooCommerce Stripe Payment Gateway plugin.
The primary reason for this is to ensure the security and privacy of your customers’ sensitive information. Stripe is designed to handle payments securely, and it does not have a function to just collect and store bank details without processing a payment. This is in accordance with PCI-DSS (Payment Card Industry Data Security Standard) guidelines, which are strict about how card data should be handled and stored.
However, if your goal is to allow customers to reserve a product without immediate payment, you might want to consider using the WooCommerce Deposits or WooCommerce Payments plugin. This plugin lets your customers put down a deposit or use a payment plan for products you specify. It’s a great way to handle pre-orders or similar scenarios.
