Apply Categories to individual photos

Hi!

I am having some trouble understanding the logic of Galleries and Categories. Let’s say I have a gallery of photos from a holiday. This could contain many different kinds of photos. Then I create Categories like Architecture, Nature, People etc. How then can I assign categories to individual photos from a gallery? That doesn’t seem to work, and the option to filter on category therefore also is useless.

If this is simply not the way it works, can anyone please explain how to get this done? Should I create a gallery that contains only architecture photo’s for example? And a new gallery for Nature etc? That seems illogical to me but I could be totally wrong here.
