    Why would the Editor option not be available (showing) in the Appearance section? I have other WP sites and its there but not on one of them.

    It can be disabled in wp-config.php via this line:

    define( 'DISALLOW_FILE_EDIT', true );

    If that’s there and if you want the editor back (a bad thing, in my opinion), delete that line or change true to false.
