Any way to edit how the custom fields are sent via email?

This plugin is almost perfect for what I need.
My only problem is that the “New appointment booking” email sent to Admin is very simple/unrefined. I have to create a very detailed and long Form for my costumer to fill while booking an appointment, but the “custom fields” I created with Contact Form 7 are sent via email as a simple list, line over line, and some fields are out of place since “select” and “checkbox” are processed last and showed last in the email, that makes the list even worse. I have no control over this as of right now. You just put #customer_custom in the “email editor” and I have no control over how the data is presented, which turns into a problem if the form is a little more complex like mine.
Is there any way that I can edit this email “template” and refine the way custom fields are presented?
I can handle myself with php, javascript, css and such. So if needed, I can edit my plugins files, just give me a little help and guidance on where to look for.
